Baby Dutch Pancake

Here is the recipe for light and fluffy pancake that we often serve to our clients during their stay.


Ingredients (for 2-4 persons)

  • 3 eggs

  • 160g milk

  • 1/4 tsp vanilla extract

  • 90g flour

  • 1/4 tsp salt

  • 20g butter


Directions

  1. Preheat the oven at 180°C.

  2. Heat the pan with the butter in the oven until butter melts and pan is very hot. Use the lower rack and make sure there is enough space above when the pancake rises.

  3. Combine the eggs, milk and vanilla extract in the bowl until it mixes well.

  4. Add in the flour and salt to the wet mixture, and mix them with a whip. Do not worry if you still have some lumps in the mixture.

  5. Carefully take out the hot pan, and pour in the mixture to the hot pan. Put the pan back to the oven and cook it about 20 minute.

  6. Take out the pan and you can add any fruits and sprinkle powdered sugar on top of the fruits.

  7. Serve it immediately. Enjoy!


This recipe is best to use cast iron pan.
